Wow! What a great set of submissions for the first ever LMKIA giveaway! All entrants were asked to submit their favorite recipe from their stockpile, along with the price for what it cost them. I got some great entries! Unfortunately I only have three Cincymoms cookbooks to give away…so here go my three picks for the best low-cost meals!
–Tonya submitted this nutritious and yummy-sounding dish that seems to be quite the crowd-pleaser! Total cost before coupons was $12.04.
Let me start by saying that zucchini and eggplant take in the flavors of what ever you cook them with - so for you non-veggie lovers - TRY IT. The neighbor kids BEG me to make it.
Chicken Veggie Bake
2# boneless skinless chicken ( $2.69 # House of meats)
1 Med. Zucchini ( $.99 each)
1 Med Eggplant ($.99 each)
1 pk Taco seasoning ($.69)
1 jar Meijer Salsa ($.99)
1 bag (2 cup) shredded Cheese ($2.99)
Cook boneless skinless chicken breast until done. Drain well and mix with taco seasoning. Your choice to peel or not - Slice zucchini and eggplant. Layer the bottom of a baking dish. Usually about 2 layers. Cover with seasoned chicken. Cover with salsa. Cover with cheese. Bake @ 350 until veggie are done and cheese is bubbly - usually about 60 min. Cut and serve like Lasagne.
This recipe is good for almost any diet- I low carb a lot and this is perfect.

Easy Jambalaya
1 pkg Lipton/Knorr Red Beans & Rice (24 cents)
1 pkg John Morrell Bigger Than the Bun Smoked Sausages, sliced on the bias (19 cents)
1/4 c diced onion (12 cents)
1/2 red bell pepper ($1.25 - sad isn’t it?)
1 zucchini (from garden)
2 c water
2 tsp olive oil
salt
pepper
Preheat skillet on med-high w/ olive oil. Saute sausage, onion, and bell pepper for 3 min. Add zucchini and saute until veggies are tender and sausage has browned slightly. Season w/ salt & pepper. Add rice packet and water, bring to a boil. Reduce heat and simmer for 7 minutes. Serves 4. **I will also add carrot, peas, or whatever other veggies I have on hand that need to be used, but this is the basic recipe I usually make. Can also substitute kielbasa, but smoked sausage is the deal I found.
–Last but most definitely not least, Amy got creative with some leftover chicken and various ingredients. Sounds so good I’m going to go look in my pantry to see if I’ve got the ingredients! Total cost $6!
I made this recipe last week from things out of my pantry. I had boiled a chicken a couple days previous and made chicken soup so I had some chicken leftover in the refrigerator. I hope this is everything since I kind of grabbed what I had on hand.
1 lb package of bow tie pasta
Olive Oil
Leftover cooked chicken, cut up
Can of artichokes, drained
Small can of tomato sauce
1 can of diced tomatoes with oregano, garlic and basil
Salt and pepper
Mushrooms - fresh or canned
1. Cook pasta according to package directions. 2. Heat Olive Oil in pan. Add cut up chicken, artichokes, mushrooms, salt and pepper to taste. Cook for 5 minutes or until hot and mushrooms are cooked. Add small can of tomato sauce and diced tomatoes. Simmer for about 5 minutes. 3. Once hot, pour into large bowl and add cooked pasta. Stir and serve.

I am sorry if this not the right place to post this but I tried thru Cincy Moms Site and it would not go thru.
I took your class back in July and have a question that I really need a expert answer from. I know from the class you said that we can get sample tide for a $1.00 and I have $1.00 off coupon’s so they would be free but I am having a hard time finding them in the stores. I live in Fairfield Township and tried on 3 different occasions to find them at my Target and I can’t find them. Can you please tell me where I may be able to go and find them I am willing to travel to get them. I have about 30 coupons because I ordered them off e-bay some time ago. I hate for them to expire before I can use them. So if you could please direct me in the right direction. Thanks so much,
